Omelets, Not Just for Breakfast Anymore!
When's the last time you had a really good omelet? I mean, a really good, really good for you omelet. Chances are, if you're the typical American that's rushed in the mornings to get in a decent meal, it's been a while.
So, check this out. Omelets are great way to get in a really good, really paleo friendly meal, in a short amount of time, for any meal.
Garden Omelet
- diced onions
- diced bell pepper
- diced tomatoes
- shredded baby spinach
- diced mushrooms
- crumbled sausage, bacon, diced ham, diced chicken, or something that tastes good to you, but just a little bit
- 1 whole egg
- 2-4 egg whites (depends on how jacked you are!)
- 1 tblsp Olive Oil
- chopped herbs to taste (parsley, basil, cilantro. . .)
- salt and pepper to taste
- In a med-high heated skillet with cooking spray, briefly saute the veggies until slightly soft. I like a slight crunch with mine. If you want them softer, saute them longer.
- Set the veggies aside and turn the burner down to medium.
- Scramble the eggs and the olive oil together in a bowl.
- Spray the pan again and add the eggs. Do not stir! Let the eggs set up. Salt and pepper to taste.
- Once the eggs set slightly (when you shake the pan, they don't slide all over the place), gently slide a large spatula all the way under. Flip it over, gently, add the veggies, and fold half of the omelet over.
- Let it cook for a few seconds, then flip it to the other side.
- Serve it up with the chopped herbs on top and a little hot sauce (optional of course) and you're good to go!
